Another firm favourite with the Always FIT members! A hearty, filling dish the whole family will love.
Time: 45 minutes (including prep)
200g wholewheat pasta
2 tsp olive oil
2 garlic cloves, crushed
1 large onion, diced
40g chorizo, finely chopped
4 chicken breasts, chopped
2 x 400g tins chopped tomatoes
1 tsp dried oregano
4 handfuls spinach
Sea salt and freshly-ground black pepper
100g mozzarella cheese, chopped into small chunks
30g parmesan cheese, grated
1 large handful fresh basil, roughly chopped
Preheat the oven to 220C/ fan 200C/ gas mark 7.
Cook the pasta according to packet instructions.
Heat the olive oil in a large pan over medium heat and add the garlic, onion and chorizo. Fry for 2-3 minutes to soften.
Add the chicken breasts and fry for 5-6 minutes until golden.
Add the chopped tomatoes, oregano and spinach. Season with the sea salt and black pepper, mix well and simmer for 2-3 minutes until the spinach has wilted.
Drain the pasta and add to the pan, mixing well. Turn off the heat, transfer the pasta and sauce to an ovenproof dish and evenly top with the mozzarella and parmesan cheese.
Bake in the oven for 15-20 minutes until the cheese has melted and the top is crisp. Sprinkle over the basil to finish.
